A practical guide to receiving wholesale cauliflower, sequencing preparation and recording waste for restaurants, hotels and caterers. Ürün seçenekleri ve fire azaltma rehberi planlamayı destekler.
Open the order around menu use
Cauliflower moves through roasting, soup, garnish and hot-buffet stations at different speeds. Plan the order with the recipe yield and expected covers, not only by carton or kilogram.
Inspect the head and leaf structure at intake
Check a representative carton for compact heads, natural colour, excess moisture, bruising, dark marks and unusual odour. Keep questionable produce separate and record the intake note.
Keep preparation close to service
Schedule leaf and stem trimming close to the service flow. Limiting unnecessary holding after cutting makes usable yield and kitchen organisation easier to follow.
Make batch order visible
Give each delivery an arrival-time and intended-use label. Use opened or more sensitive batches first in a controlled sequence rather than placing a new carton ahead of older stock.
Use waste data in the next order
Weigh gross, usable and trimmed portions from one test carton. Save the result with the recipe, delivery and use notes so the next order reflects actual kitchen yield.
